Morning
Breakfast at the four-star Hotel De Orangerie is a bit of a Bruges tradition and one worthy of adoption. Each day a veritable feast of breakfast delights is served at their Champagne buffet and the combination of food and 15th century elegance, makes this a lovely way to start the day. The beautiful Jacobean-style breakfast room overlooks a canal terrace and serves up an impressive selection of fruit, eggs prepared any way you choose, meats, vegetables and of course, fine Champagne.
Afternoon
If you have had a chance to walk off breakfast, a gourmet lunch awaits you at another classic Restaurant 't Pandreitje, located at the Quai of the Rosary (Rozenhoedkaai). Housed in a historic building dating back to 1740, the elegant Louis XVI-era setting will put you in the mood to enjoy a rich selection of traditional French and Belgian dishes by Chef Guy Van Neste including vine-leaf roasted young partridge, duck liver stuffed with apples and raisins, grilled bison in red wine or fillet of red mullet with eggplant caviar. On sunny days, dine in the garden terrace.
Evening
Chef Geert Van Hecke was the first Flemish chef to be awarded three Michelin stars and you can’t come to Bruges without sampling his fine cuisine at De Karmeliet Restaurant at the Hotel De Tuilereën. Set in a grand 18th-century house, De Karmeliet is considered one of Europe's finest eateries serving a combination of traditional Belgian fare chef Van Heck's own style of local-Asian fusion. Try the peanut-crusted blue fin tuna stuffed with cuttlefish or veal cheek braised in Rodenbach beer.
After Dinner Drinks
When in Bruges, do as the locals do and try some local brews. For a huge choice, visit Brugs Beertje, open late every night, but remember that blonde, dark and red Belgian beers all pack a punch with extremely high alcohol levels, so drink responsibly.
